How does it play out

We begin our experience with a delightful sampling from our extensive chocolate tasting. Following this, participants will have the opportunity to create their own chocolate bars, which will require some time to set before being removed from their molds. Subsequently, I will present an informative discussion about the cacao plant, during which I often have cacao pods available for viewing, particularly during the wet season.

We will explore the various cacao varieties, delving into the intricacies of the fermentation process and the significance of sundrying, both of which are traditionally carried out by indigenous communities. Finally, we will discuss our role in chocolate production, which encompasses selection, roasting, cracking, and winnowing, highlighting the craftsmanship involved in bringing chocolate from bean to bar.

During this part of the experience, we will focus exclusively on the diverse range of chocolates we create here. As we delve into the rich history of cacao and chocolate, this narrative will seamlessly lead us to the introduction of our signature beverage, enhancing the chocolate tasting. After savoring the chocolates, we will wrap up the bar, and if time permits, I will provide insights into the distinctions between industrial and artisanal chocolate.

What an unforgettable and heartwarming experience for our family to experience the journey from cacao bean to chocolate bar with Giovanni and his team! Our children (5 and 8) still rave about it. Thanks!!

We had a chocolate tour/experience. The owner is in a class of his own with his passion and patience, and just overall great vibe. We got to see the process from tasting cacao beans, roasted bean, tasting the roasted beans, using a pestle to break down the beans, putting chocolate into molds, having traditional hot chocolate, and trying different chocolates and ganaches. Throughout our time there, the owner was explaining and showing us the process and helping my daughters to take part in it.
