We do very small batch Chocolate, so there are always some different notes to experience.

Crafting Chocolate with Purpose

At Indigena Cafe & Chocolate, the chocolate making is directly related to finding the best way to help the Indigenous Community. It is one of the two main tools, together with selling their crafts. I started at the beginning to buy cacao from them and use it to make smoothies in the cafe.

I used to pay 20% extra the price they asked me for and another 20% extra to improve the farms organically. I had already taken basic chocolate making courses and it was the way to guarantee that I could make more money flow into their pockets. I did a very professional course with Ecole Chocolat and I became obsessed with it. I started to make chocolate with their cacao beans here and I realized how lucky I have been to have the opportunity to craft chocolate with such good quality cacao.

A few years have passed by and we have definitely been able to make some chocolate lovers happy, getting people closer to cacao than marketing and above all, we gave the input in the community that it is worth it to harvest cacao.

Our Chocolates

At Indigena Cafe & Chocolate, we cater to all chocolate lovers by offering a variety of chocolate percentages. Our selection includes 82% dark chocolate, 75% dark chocolate, 67% dark chocolate, and 50% dark milk chocolate, available in bars and bites. Each dark chocolate is crafted from bean to bar with just two ingredients, while our dark milk chocolate uses three. We also produce white chocolate made with 40% Costa Rican cocoa butter.

If you want pure Cacao in the form of Chocolate, call it Cacao, 100% Chocolate, or Ceremonial grade, we have it normally in the form of blocks. It is amazing for beverages for the incredible benefits, for the flavor, and for those of you who are interested in the spiritual side, that Cacao was grown with that intention, for their own ceremonies and because for them it is literally the food of the gods."


We offer a variety of chocolate inclusions with different percentages to satisfy every chocolate lover. Feel free to ask us about our available options.

The cacao used to make our chocolate is Single Farm and grows at 1100 meters above sea level, in their backyard. Cacao is still very important amongst them, and Cacao Rituals are still common. They don't use chemicals to grow it, but it is not certified organic. It is paid way beyond fair or direct trade but is not certified. We are making chocolate to help them, and I strongly believe that what we pay should go into their hands and not be used for paying expensive certifications. Hope you understand.
